  • 125 g biscuit crumbs
  • 80 g butter, melted
  • 500 g PHILADELPHIA light Cream Cheese, softened
  • 3/4 cup caster sugar
  • 3 teaspoons gelatine (plant based like Agar powder) dissolved in 1/4 cup boiling water
  • 1 cup thickened cream, softly whipped
  • Lemon slices or fresh fruit, to decorate
  • Blueberries to decorate
  • Raspberries to decorate


  1. COMBINE biscuit crumbs and butter and press into the base of a 20cm springform pan; chill.
  2. BEAT cream cheese using an electric mixer until smooth. Beat in heavy cream and gelatine mixture until smooth, then add lemon juice and rind and beat until combined.- POUR mixture into prepared base and refrigerate 3 hours or overnight.
