I’ve never eaten such a delicious Zucchini in my life!! Its so fast and easy. A very simple recipe that everyone will love and amazingly its keto friendly! Quick and delicious zucchini recipe in 15 minutes! I always cook this zucchini dish, my family loves it!

Ingredients:

  • 2 medium/large zucchini (quarter cuts)
  • 2 tablespoons Almond meal
  • Salt and pepper (1/2 tsp – to taste)
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon red chilli flakes
  • Olive oil 2 tablespoons
  • Fresh chives 1 teaspoon (chopped)

Method:

  1. Cut two zucchini in quarter 3 cm cubes and add in the large bowl. In the same bowl add almond meal, salt and pepper, paprika, red chilli flakes and mix well
  2. In a large frying pan add 2 Tbsp olive oil and fry zucchini in two batches for 6-8 minutes at medium flame or until zucchini turns slightly brownish.
  3. Garnish with dried basil and fresh chives and serve.
