Zucchini with mixed vegetables along with eggs is nutrient pack recipe suitable for vegetarians. Although, we made it for the dinner but it can be made in breakfast or lunch as well. Zucchini is so healthy and baking give sit a unique flavour. Try this recipe you will love this.

Ingredients:

  • Zucchini 1 large, cut into long matchsticks
  • Mixed vegetables, 100 gram (frozen or fresh)
  • Eggs 4, well beaten
  • Self raising flour, 1/4 cup
  • Feta cheese, 30 gram, crumbled
  • Salt, 1 tsp
  • Black pepper, 1 tsp

Method:

  1. Preheat oven to 190°C. Grease: a 20 cm (base measurement) bakin g pan and line with baking paper, allowing sides to overhang slightly.
  2. Cut 1 large zucchini into long matchsticks. Whisk 4 Eggs and add 1/4 cup self-raising flour in a large bowl until combined.
  3. Add three-quarters of the zucchini, 1 cup (100 g) mixed vegetables, feta cheese Season. Pour into the lined pan. Bake for 25-30 mins or until just set. Set aside for 5 mins.
  4. Top slice with remaining zucchini and sprinkle with remaining crumbled feta cheese.
