Are you after an easy and tasty dinner recipe? Try this beef kofta that’s served over a creamy yoghurt base alongside a zingy tomato salad and crispy chickpeas. These beef Koftas are a long standing favorite Middle Eastern recipe! Made with beef mince (ground beef) and a hefty dose of spices, the smell when this is cooking is intoxicating!

Ingredients:
For Roasted Chickpeas
- 250 g boiled chickpeas
- 1 tsp smoked paprika
- 1 Tbsp Olive oil
For Kofta kebabs
- 500 g Beef Mince
- 1 tsp Salt
- 1 tsp Cajun Seasoning
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp ginger powder
- 1 tsp smoked paprika
- 1 Tbsp mint and green chili paste
- 3 Tbsp Almond meal
Tomato Salad
- Cherry Tomatoes, 6-7 cut in halves
- 1/4 Red Onion, round cut
- 1/2 Cucumber, cut in rounds
- Mint leaves, handful
- Lemon juiced
- Olive Oil 1 Tbsp
- Salt and pepper seasoning
Method:
- Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper. Combine chickpeas, paprika and 1 tsp oil in a bowl. Place on tray and season. Bake for 20 minutes or until golden.
- Meanwhile, take beef mince in a large bowl, add all the ingredients mentioned under kofta kebabs and mix well. Then take palm size beef mince mixture and roll meat balls. Heat olive oil in a large frying pan over medium heat. Cook kofta in 2 batches, turning, for 5 minutes or until cooked through. Transfer to a plate and cover to keep warm.
- Combine lemon juice, tomato, cucumber, red onion and remaining oil in a medium bowl. Season. Spread bowls with yogurt, then top with tomato mixture, cucumber, kofta, chickpeas and mint. Season with pepper. Serve with bread
