You simply spoon the chilli in an oven proof ramekin, break an egg in top and bake it until the egg white turns opaque.   • 1 Tablespoon olive oil
  • 1 Brown onion, Sliced cut or chopped
  • 2 Garlic cloves, crushed
  • 1 Teaspoon Mexican chilli powder
  • 300 gram Lean beef mince
  • 300 gram Can finely chopped tomatoes
  • 1 Tablespoon tomato paste
  • 200 gram Red kidney beans, rinsed, drained
  • 3 Eggs
  • Coriander leaves (to serve)
  • 1 pkt warmed flour tortillas (to serve)


  1. Heat oil in a large flameproof roasting pan over mediumhigh heat. Add onion and garlic, then cook, stirring, for 4 minutes or until onion has softened. Add chilli powder and cook, stirring, for 1 minute or until fragrant.
  2. Add mince and cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Stir in tomatoes, paste, beans and 1/4 cup water. Reduce heat to medium and simmer, stirring occasionally, for 10 minutes or until mixture thickens. Season.
  3. Dish out in oven proof baking dish and by using the back of a spoon, make 3 indents in mince mixture. Crack one egg into each indent, then bake in oven at 180 C for 7-8 minutes until eggs are cooked to your liking. Scatter over coriander and serve with tortillas.
