Ingredients for Keto Meatballs: 1/2 pound ground beef chuck, 85 % lean 1/2 pound ground pork (or turkey or veal) 1/4 cup Parmesan cheese, grated 1/4 cup heavy cream 1 large egg, beaten 2 tbsp minced fresh parsely 1 tbsp finely grated onion (it will be mush) 1 clove garlic, grated (small – medium in size) 1/2 tsp salt & pepper
Method for Keto Meatballs (makes 12): Add the beef and pork to a medium bowl and break up into smaller chunks, aiming for an even mix. Add the remaining ingredients to the meat and mix with a hand mixer until just combined. Do not over-mix. Lightly oil hands and roll 12 meatballs. I weigh mine to get the weights equal for even cooking. To do it by eye, divide the meatball mixture in half and roll 6 meatballs of even looking size and repeat with the remaining meat. Bake meatballs on 400 for 15-20 minutes.
Ingredients for Keto Vodka Sauce (freeze leftover sauce): 2 tbsp olive oil 1/2 cup chopped onion 2 garlic cloves chopped pinch red pepper flakes 56 oz San Marzano tomatoes (2 big cans) 1/2 cup vodka 4 oz salted butter 1/4 cup heavy cream 1/4 cup parmesan cheese 1 tsp salt
Method for Keto Vodka Sauce: Heat the olive oil in a large saucepan over medium. Add the onion and garlic. Cook until they are softened and translucent. Add the red pepper flakes, tomatoes, and vodka. Simmer for 15 minutes. Stir in the butter until melted. Remove from the heat. Add the cream, cheese, and salt
Additional ingredients: 3 Large zucchini 2 Cups Shredded Mozzarella
Method for Zucchini Subs (makes 6 subs): Cut 3 Zucchinis in half long ways. Scoop out the insides of the zucchini with a spoon. Chop up the keto meatballs a bit and put into the keto vodka sauce. Warm up the meatballs and vodka sauce if necessary and spread mixture into the hollowed out zucchini subs. Top with mozzarella cheese. Bake keto zucchini meatball subs in oven on 400 for 7 minutes. Take out switch oven to broil and broil zucchini boats for another 4 minutes to get a nice brown on the cheese.
Note: it’s a bit of a process, but if you enjoy cooking you will love making these 🙂 you can also opt for frozen meatballs and canned sauce if you don’t feel like doing all these steps, just less carbs this way!
