Crepes are literally limitless. A sweet combo, a savory combo, anything that tickles your pickle really…. 😂🤪
We decided on sweet, the “pastry cream” is 1 box @simplydelish vanilla pudding. 3/4 cup of heavy cream beaten into a whipped cream, add 2 tbsps of powdered swerve after it’s stiff. Fold into the pudding til incorporated into a nice fluffy yum bomb….
The crepes are just this easy batter:⠀⠀⠀
6 eggs⠀⠀⠀⠀
6 oz cream cheese softened⠀⠀⠀⠀
1 tbsp cinnamon ⠀⠀⠀⠀
1 tbsp sweetener ⠀⠀
⠀⠀⠀⠀
Hit all the ingredients with an electric mixer for a few minutes to smooth out the cream cheese in the batter.â €
Use a half cup scooper for the batter in a 12 inch skillet…

It’s not cooking them that’s the trick, that’s easy. Its getting these bad boys flipped in one piece. We mastered that, and these were born.⠀⠀⠀
