Ingredients

1 lb smoky-flavoured bacon, chopped

1 lb sausage, cut into rounds (I used mild Italian)

1 lb frozen precooked large/jumbo shrimp, thawed, tails removed

  • 1 tsp minced garlic

  • 1 tsp Mexican chili powder

  • 1 tsp lemon juice

1 yellow onion, diced

2 bell peppers, diced (red, orange, or yellow)

2 celery stalks, diced

4 tsp minced garlic

2-3 cups cauliflower rice

1 cup diced tomatoes, not drained

2 tsp chicken bouillon paste (or 2 cubes)

1 tsp Worcestershire sauce

2 tsp lemon juice

2 tsp lime juice

1 cup white wine (I used Moscato, Pinot Grigio is great too and lower carb)

1/4 cup red wine vinegar

2 tbsp tomato paste (or marinara sauce)

1/4 cup fresh cilantro, chopped

Spice mix:

  • 1 tbsp paprika

  • 1 tbsp smoked paprika

  • 2 tsp Mexican chili powder

  • 2 tsp oregano

  • 2 tsp salt

  • 2 tsp black pepper

  • 1 tsp thyme

  • 1/4 tsp cayenne or Indian chili powder

  • 1/4 tsp red pepper flakes

  • 1/8 onion powder

I cooked almost everyday while in quarantine and this was by far my favourite dish. It’s a mashup of two recipes I found online that checks off everything I love: vegetables, meat, sweet, spicy, low carb, hearty af.

I’m very aware that white wine is not keto-friendly in the least, but considering the rest of the ingredients are, I’m personally not too worried about it. I’m a type-1 diabetic and for that reason is why I cook keto…ish. A single serving (1 cup) of this meal is roughly 10g carbs or less, though it’s very heavy preventing me from snacking afterwards. I don’t have any experience with a wine alternative, so I didn’t list one.

Lastly, I pan fry everything with a large iron skillet on medium heat. Things take longer to cook, but nothing burns and the flavours have more time to blend. Enjoy!

Directions

Cook the bacon 20-25 minutes until the edges become brown and crispy. Do not turn it into gross little sticks. Remove bacon from pan and set aside, but do not drain the fat.

Cook sausage until just browned throughout, approximately 8-10 minutes. Remove immediately and put with bacon. Drain half of the grease and use the rest to cook the vegetables ingredients.

Sear shrimp 4-5 minutes per side at medium-high heat with garlic, lemon juice, and chili powder until browned. Remove immediately and set aside with other meats.

Turn pan back down to medium heat. Cook onion, peppers, and celery in the meat oils until soft. This takes roughly 20 minutes. Be sure to stir every few minutes. Add minced garlic and cook for another 5 minutes.

Steam cauliflower rice for about 8-10 minutes in the microwave or on stovetop, if you prefer. Drain any liquid.

Add tomatoes, chicken bouillon, Worcestershire, lemon and lime juices, white wine, red wine vinegar, and spice mix to vegetables. Mix well and simmer for about 7-10 minutes to let off some liquid.

Stir in tomato paste, cauliflower rice, and the cooked meat. The meal should be rather thick and hearty.

Garnish with cilantro and little lime juice on top. Let stand 10 min before serving.
