Keto Cubano sandwich

Ingredients:

2 Chaffles per your favorite recipe

2-3 Slices of ham

2-3 slices Mojo Pork (or ~2 ounces if shredded)

4 slices pickles

2 Tbsp Softened Butter (not melted)

2 slices Swiss cheese

Yellow Mustard

Equipment: A panini press or 2 frying pans, 1 medium and 1 large. Cast iron preferred.

Directions (using 2 pans):

Cook you Chaffles and butter one side of each after they cook.

In a large frying pan on medium heat, place the chaffles butter-side down to brown them. After browned, place on a plate.

Begin heating the medium pan on medium-high heat.

In the large pan, cook the pork and ham just enough to brown them.

As the pork products are frying, butter the other side (the outside) of the chaffles. Spread mustard on the browned side and place on plate mustard-side up.

Layer the pork, ham, cheese, and pickles on one half of chaffle, trying to keep it within the edges of the chaffle (because it will spread out when pressed).

Place the other chaffle on top to complete the stack.

Move the sandwich to the large pan and then place the bottom of the other hot pan on top of the sandwich and press down to flatten out. Continue applying pressure for about 2 minutes.

When browned and flattened, remove from pan, let cool, slice in half, take photos of your Keto Cubano and devour.
