Ingredients:

1 pound ground Turkey

1 cup chunky salsa

4 eggs
-
Salt
-
Pepper
-
Cayenne (optional)
Directions:

Put ground Turkey in skillet and season with salt, pepper, and cayenne
-
Brown until most of the liquid is gone
-
Add the salsa and once it is warm, turn the skillet to low
-
Make 4 “holes” in the meat mix and crack an egg into each. Season each egg with salt and pepper
-
Cover the skillet with a lid and cook until the egg whites are fully cooked (I like to have my egg a little runny, so cook a few minutes longer to have it fully cooked through)

Serve warm
