two chicken breasts

1 egg

1 tablespoon heavy cream

1/4 cup grated parmesan

20g pork rinds, crushed

seasonings of choice (I did salt, pepper, oregano, and garlic powder)

1/4 cup marinara sauce

2/3 cup shredded mozzarella

Pound chicken breasts to about 1″ thick so they cook quicker and more evenly

Whisk egg and cream in a bowl

In another large bowl or on a plate, mix parmesan, pork rinds, and seasonings

Dip each piece of chicken in egg mixture, then press into “breading”
To air fry: preheat to 360F, add chicken and cook for 6 minutes, flip, top with marinara and mozzarella, and cook additional 5 mins
To fry: heat oil of choice in pan and add chicken. Fry until golden brown then flip. Top with marinara and mozzarella and finish in the oven (I’d say at 400F until thermometer reads 165 in the chicken).
On the side of mine is kohlrabi “linguine” which i get in a bag and just throw in the microwave. I mixed mine with 1/2 tablespoon of butter and some more parmesan cheese and garlic powder.
