Baked Salmon with Cauliflower Rice

Delicious, easy and quick salmon dinner recipe in just in less than 30 minutes! Cook this tasty, creamy and very juicy salmon recipe for delicious dinner. Cauliflower Rice is perfect as a side dish.

4 salmon fillets – 120 g each (500 grams / 1.1 LBs total)

1/2 tsp salt

1/4 tsp ground black pepper

2 tbsp olive oil

1 tbsp Dijon mustard

2 tbsp fresh lemon juice

2 tbsp fresh parsley – chopped

2 tbsp chives – chopped

1/2 tsp chili flakes – or to taste

2 garlic cloves – pressed

100 gram cauliflower rice to serve

  • Preheat the oven to 320°F (160°C) and position a rack on the top level. Line a rimmed baking sheet with parchment paper.

  • Lay the salmon fillets on the prepared baking sheet, skin-side-down. Season with a pinch of salt and pepper.

  • In a small bowl, add the remaining ingredients and whisk well to combine.

  • Pour this mixture over the salmon and use your clean hands to gently rub it all over the top and sides.

  • Bake for 20 min in the oven. The salmon should be juicy and flake easily when pressed on the top with a fork.

  • Fry cauliflower rice with seasoning and serve baked salmon with cauliflower rice.
