On a cold grey winter day there is nothing like a good Chili recipe to warm your body and soul. This recipe is all beef using cubed round eye and ground beef to keep it as low carb as possible . You can leave out the tomato paste to make it lower carb, but its only 9 net carbs ( without garnish ) . You can add sour cream , scallions , cilantro , chopped onions cheese or whatever you would like .

Low Carb Keto all beef Chili


2 – Pounds eye of round roast, cut into ¾ inch cubes.

2 – Pounds 80 / 20 ground beef.

2 – Red onions medium dice.

1- Large red sweet pepper medium dice.

3- Cloves of garlic minced.

1- 28 ounce can have crushed tomatoes.

1- 14 ounce cans fire roasted tomatoes.

2- Small Jalapeno peppers, seeded and minced.

1- Tablespoon dried oregano.

2- Tablespoons Chipotle chili powder.

2- Tablespoons chili powder.

½- Teaspoon cayenne pepper.

2- Teaspoons cumin seeds.

1- Tablespoons smoked paprika.

3- Tablespoons tomato paste.

1- Pinch cinnamon powder.

1- Tablespoon balsamic vinegar.

2- Beef bouillon cubes.

Olive oil.

Salt and pepper to taste.

For garnish, grated cheese, cilantro, and sour cream, chopped scallions, chopped red onion, diced fresh tomato, sliced avocado or pickled jalapeno peppers or whatever you want.


In a dry sauté pan toast cumin seeds, till they brown slightly and give off their aroma

Pre heat oven to 300 degrees.

In a ceramic lined or stainless steel Dutch oven , over medium high heat add onions , peppers and a pinch of salt & pepper and , sauté till the onions and peppers begin to brown slightly and caramelize.

Then add garlic and oregano and sauté for a minute more. Set aside.

In a sauté pan of cast iron pan over medium high heat add oil and working in batches brown off the cubed eye of round , being sure not to over crowd the pan and to dry the meat off with a paper towel before browning . Lightly season the meat with salt and pepper as you go. Once browned add each batch to the ditch oven.

After browning all the cubed steak, in the same pan brown off the ground beef, lightly seasoning as you go.

Add ground beef to Dutch oven, then return sauté pan to heat and add one cup of water and scrape up any brown bits in the bottom of the pan and pour over meat and onions.

Into the Dutch oven add all the remaining, spices, tomato paste, Jalapeno peppers and stir to coat the meat with the spices.

Add the crushed tomatoes and the bouillon cubes.

On the stove top bring to a simmer, taste for seasoning, and add some salt and pepper. Then cover and place in oven. Braise in oven for two to three hours or till the cubed round eye is tender.

Once tender return to stove top and add in canned fire roasted tomatoes, balsamic vinegar and bring to a simmer.

Add salt and pepper to taste. Garnish and serve.
