Refried Black Soybeans
Yields 2 cups of refried beans
As requested, here is my keto friendly refried bean recipe.
I’m using keto friendly organic non GMO black soybeans for my authentic creamy Mexican refried beans.
Nutrition values for black soybeans:
½ cup of cooked black soybeans = 7 grams protein, 8 grams carbs, 7 grams fiber for 1 net carb.

Ingredients:
2 cups of cooked black soybeans
Reserve bean liquid
2 TBSP bacon fat
2 TBSP onion finely chopped
2 cloves garlic
1 serrano or jalapeno pepper diced
1 tsp. cumin
1 tsp. chili powder
½ tsp. salt
¼ tsp. fresh cracked pepper
Lime wedge
Optional Garnish:
Chopped cilantro
Full fat sour cream
Chopped green onion
Shredded cheese of your choice
2 strips cooked bacon chopped

Directions:
Grind the garlic into a smooth paste with the backside of a chef’s knife.
Sauté onion garlic paste and serrano in the bacon fat.
Stir in the cumin, chili powder.
Stir in cooked black soybeans.
Stir in salt and pepper.
Turn heat up to medium high.
Cook until the beans break down, stirring constantly.
Squeeze in the juice from a lime wedge.
Add reserved bean liquid if need be.
Mash refried beans with a potato masher or blend with a stick blender.
Adjust for desired creamy consistency, salt and pepper.
Serve hot with shredded cheese, top with sour cream, cilantro, chopped green onion, sprinkle of bacon bits and a lime wedge.
Cooking Dry Black Soybeans
1 cup of dry black soybeans = 2 cups when cooked
½ cup of cooked black soybeans = 7 grams protein, 8 grams carbs, 7 grams fiber, 1 net carb
Soak one cup of dry beans in 4 cups of water in the fridge overnight.
Rinse and drain beans.
Add beans to a pressure cooker with 1 TBSP EVOO and a ½ tsp salt.
Cover beans with water.
Pressure cook for 20 minutes with a natural steam release.
Drain beans, save liquid for hummus and refried black soybeans.
Notes:
I’m using organic non GMO dry black soybeans.
You can also use canned black soybeans.
Black soybeans are keto friendly with 1 net carb per 1/2 cup of cooked beans.
One cup of dried beans yields 2 cups of cooked beans.
