Ingredients

  • 1 1/4 cup Vital Wheat Gluten

  • 2/3 cup Lupin Flour

  • 1/2 cup Oat Fiber

  • 2-3 tbsp Confectioners Swerve

  • 1 tsp Salt

  • 1/2 tsp Xanthan Gum

  • 1 cup Hot Water (between 125-130℉)

  • 1 tbsp Instant Yeast

  • 1 tsp Honey (to activate the yeast)

  • 3 tbs olive oil

Directions –

  1. ⁠mix all dry

  2. proof yeast with honey in stand mixer (will get eaten by yeast so negligible)

  3. ⁠eggs and softened butter mixed together then pour into yeast water (make sure room temp)

  4. ⁠pour dry into wet and mix with dough hook for at least 7 mins (you really need this, it won’t come together into a dough until the last minute or 2 and I went to 8 mins)

  5. ⁠divide into 2 tight balls

  6. ⁠proof at least 90 mins with cling wrap so doesn’t dry

  7. ⁠shape into pizza as you would a neopolitan ( hands and movement)

  8. ⁠don’t prebake

  9. ⁠top with sauce can cheese

  10. ⁠bake at 425 until brown
