Dry Rub Side Ribs

On the smoker or in the oven, my sugar free dry rub side ribs are cooked to perfection. Cooking a whole rack of side ribs old school is so easy and worth the time. Just the right amount of spice in my low carb sugar free rib rub, If you are a rib dipper, I have some good sugar free sauce options to compliment the dry rub side ribs. If you have never slow cooked ribs before, follow along as I make the best ribs out there.

Ingredients:

One large rack of side ribs

½ cup apple cider vinegar in a spray bottle or North Carolina Mop (recipe below)

Sugar Free Rib and Butt Rub

¼ cup paprika

1 TBSP celery salt

2 TBSP garlic powder

2 TBSP onion powder

2 TBSP seasoning salt

2 TBSP chili powder

3 TBSP fresh ground pepper

2 TBSP sugar free sweetener of your choice (erythritol)

Mix rub ingredients well in a mixing bowl (makes enough sugar free rub for two 10 pound pork butts or 2 racks of side ribs).

Directions:

Prepare and preheat your smoker to 235-250 degrees for an indirect cook.

Flip the ribs bone side up and slide your fingers under the rubbery membrane next to the bone. I use a piece of paper towel to grip the slippery membrane. Pull it off and discard.

Rub the ribs liberty on both sides with the sugar free rib rub.

When your smoker is preheated and burning clean add the ribs to the grill, bone side down.

Smoke for about 2-3 hours until you have nice smoke bark color.

Spray ribs every 30 minutes from now on with apple cider vinegar or mop with the North Carolina Mop

Pull the ribs off the smoker when you feel that the ribs are sufficiently cooked, usually about 5-6 hours to get… tear apart tender.

I use the flop test.

Pick up one end and if it seems nice and floppy they are usually ready.

You can also wrap the dry rub side ribs in tin foil to keep warm until you are ready to eat.

Tips:

If you are using a charcoal or wood fired smoker, make sure you have enough fuel and smoke to last the entire cook.

Pull the membrane off the ribs, add the rub to both sides and wrap with plastic wrap. Rest in the fridge for 4-12 hours before smoking to add extra flavor.

Use a cotton mop or silicone brush to apply North Carolina mop

Serve with sugar free BBQ sauce on the side.

North Carolina Mop:

½ cup apple cider vinegar (Braggs Cider Vinegar is best)

2 tsp. sugar free ketchup or sugar free BBQ sauce

2 tsp. sugar free sweetener

2 tsp. kosher salt

2 tsp. red chili pepper flakes

½ tsp. fresh black pepper

Mix mop ingredients well.

Keto North Carolina Serving Sauce:

1 cup apple cider vinegar (Braggs Cider Vinegar is best)

2 TBSP sugar free ketchup or sugar free BBQ sauce

1 TBSP sugar free sweetener

1 TBSP kosher salt

1 TBSP red chili pepper flakes

1 tsp fresh black pepper

Mix ingredients well and store in a hot sauce bottle in the fridge.
