LOW CARB VINDALOO CURRY SPRING ROLLS!

I had left over chicken that I used to make my chicken nuggets, so I turned it into spring rolls! ⠀

Spring roll filling:⠀⠀
1 package ground chicken⠀⠀
1 egg⠀⠀
1/4 of a diced carrot⠀⠀
1 diced jalapeño ⠀⠀
2 cloves garlic⠀⠀
1 tsp vindaloo curry powder⠀⠀
Chopped 1/4 shallot⠀⠀
1/2 cup @porkpanko crumbs ⠀⠀
Chopped cilantro⠀⠀
Mix everything until well combined. I used half of this recipe for these spring rolls, the other half was used yesterday for the chicken nuggets. I love a two for one recipe! ⠀

I used 1 and a half sheets of @cutdacarb cut into squares. I put the filling on and rolled them up. I air fried them for about 7 minutes to cook the filling. Then fried them in avocado oil to get them nice and crispy. You could totally skip the last part, they would be equally as good just straight from the air fryer. I just like the golden color they get from a quick pan fry. ⠀

Dipping sauce:⠀
2 tbsp coconut aminos⠀
2 tbsp chili garlic sauce ⠀
1 tbsp @natures.hollow apricot jam⠀
Pinch of xanthan gum
Heat everything in a saucepan until well combined. ⠀
