Keto Fried Chicken Tenders

  1. chicken tenderloins thawed (I used 7)

  2. equal parts isopure whey protein isolate and almond flour (I used 1 C ea.)

  3. Grated parmeson (1/2 C)

  4. Salt & Pepper to taste

  5. Seasonings to taste (I used hot Hungarian paprika, cumin, and garlic powder)

  6. 2 eggs beaten

  7. avocado oil (or another high heat oil such as canola oil)


  1. Beat eggs in a large bowl

  2. In a ziploc bag, add the whey protein isolate, almond flour, grated parmesan, salt, pepper, and seasonings and mix well.

  3. Coat chicken tenderloins in egg wash and transfer to the ziploc bag.

  4. Shake the bag until chicken is evenly coated.

  5. Heat avocado oil in a wok or pan on high heat. You should have enough oil to cover 1-2 inches of the bottom.

  6. Add the chicken tenderloins and fry in batches, turning every 1-2 minutes for approximately 10 minutes or until chicken is cooked through (165 degrees Fahrenheit)

  7. Move chicken to a baking rack over a cookie sheet to cool and drain.

  8. Serve with your favorite sauce (which I forgot to do)

You could also probably try this in the air fryer, but you do need to add oil since whey isolate does not turn into a batter consistency without oil.
