Keto Bacon Cheeseburger Soup

1 tbsp butter
60g chopped onion chopped
2 cloves garlic minced
500g minced beef
90g chopped bacon
240g tinned chopped tomatoes
2 tbsp tomato puree
1.5 tsp dijon mustard
500ml beef stock
½ tsp salt
¼ tsp black pepper
80g cream cheese
170g shredded cheddar
1 tbsp Oregano
80g heavy cream / Double Cream
38g chopped cherry tomatoes

  1. In a pan add butter, chopped onion chopped, garlic minced, and fry till onions are soft.

  2. Now add the minced beef, chopped bacon, and fry until the mince is browned

  3. Now add the tinned chopped tomatoes, tomato puree dijon mustard, beef stock, salt, black pepper and combine

  4. Bring to a simmer and simmer for 15 minutes to thicken

  5. Once thickened bring down the heat and add cream cheese, shredded cheddar, Oregano and work in till everything is well combined

  6. Lower the heat again, add the heavy cream and mix in

  7. Serve up the Keto Bacon Cheeseburger Soup topping with extra cheese and chopped cherry tomatoes
