Sous Vide Pork Chop | Cauli Mash

First time making cauliflower mash. Was AMAZING… mashed potato consistency, creamy, savory. Perfect pair for the chop.

Cauli:

  • 1 pack of Costco’s riced cauliflower (can’t recall brand, but it’s frozen and comes with 4 packs of 6 cups each)

  • 5 slices of tillamook cheese, cut (could use shredded but didn’t have any)

  • 1/4c ish of heavy cream (added during blending, and a little more during final heat to round out the creaminess after I saw where the cheese got it)

Steamed cauli per instructions (microwave 6.5 mins), dumped it into the vita mix, added cream per above, removed from vitamix, put into pot, added sliced cheese, melted and mixed, added a bit more cream, salt, pepper. Done.

Chop was sous vide at 140 for 4 hours, with a quick sear in butter after. Used Montreal steak seasoning.
