Makes around 12 servings.
Ingredients:
- 1 med yellow onion, diced
- 4-5lbs ground beef
- Around 6 cups broccoli florets
- 8 slices of bacon, cooked and crumbled
- Salt and pepper to taste
For the sauce:
- 2 pints heavy whipping cream
- 3 big handfuls of shredded sharp cheddar cheese
- 4tbsp butter
- Salt and pepper to taste
Instructions:
- Dice yellow onion and put in the bottom of a 13×9 casserole dish
- Brown ground beef and season with salt and pepper, drain and set aside
- Meanwhile, steam broccoli for 3-4 mins, drain and set aside
- Cook bacon, crumble and set aside
For the sauce:
- Pour heavy whipping cream into a sauce pan and let it warm up. Season with salt and pepper to taste
- Once the heavy whipping cream is pretty warm, add cheese one handful at a time and stir until the cheese is melted. I used 3 handfuls of cheese. You want the sauce thick, but not super thick (think like, Campbell’s cream soup thickness)
Assembly:
- Put the raw diced onion in the bottom of a 13×9 casserole dish
- Pour the cooked and drained ground beef on top
- Put the cooked broccoli on top of the ground beef
- Pour the cheese sauce over the broccoli
- Top with crumbled bacon and shredded cheese
- Bake at 350 for 30-40 minutes, until the casserole is bubbly and cheese is melted.
