ROASTED CHICKEN

1 Whole Chicken

2-3 Tbsp Kosher Salt

  1. Sprinkle your bird completely in salt, including the cavity.

  2. Place onto a sheet pan and into an oven that’s been set to 450°F for 50-60 minutes or until an internal temp of 170°F has been reached on the thigh, near the bone.

  3. Let rest for 10 minutes and serve

 

HALF CHICKEN

1 Whole Chicken

1 Tbps of Seasoning of choice

  1. Grab a whole chicken and remove the spine. Cut the bird in half and sprinkle both sides with your seasoning. Place into a refrigerator for ~2 hours to let dry brine.

  2. Remove from the fridge and place into an oven set to 400°F for 35-40 minutes or until the thigh has reached an internal temp of 170°F near the bone.

  3. Let rest for 5-10 minutes and serve

 

4-Piece Family Meal

1 Whole Bird

2 Tbsp Unsalted Butter

4-5 Sprigs Rosemary

  1. Take your bird and cut it into sections. Season generously with salt.

  2. Place an oven-safe pan over high heat for about 2-3 minutes before placing your chicken pieces on skin side down. Let cook on this side for 3 minutes before flipping.

  3. Once the chicken has been flipped, add in your butter and rosemary. Baste each piece of chicken with the melted butter for about 1 minute before placing into an oven set to 350°F for 15-20 minutes or until the thigh reads an internal temperature of 170°F at the bone,

  4. Serve hot.
