Cheese stuffed onion rings

Ingredients

100g onion rings

30g almond flour

50g lupin flakes, finely ground

Cheddar cheese

Egg

Seasoning – salt, pepper, garlic powder

In case you can’t find lupin flakes, use almond flour again or finely ground pork rinds

This amounts to 10 rings devided into two servings, 7.5 net carbs each

  1. Peel and cut onions into 1-centimeter rings. Separate the rings.

  2. Slice the cheddar into even strips.

  3. Place a smaller onion ring in the center of a larger one. Fill the gap between the rings with the cheddar strips. Repeat with remaining onion rings and freeze for 1 hour. If the cheese won’t stay inside the rings, use toothpicks

  4. Place the almond flour, egg and lupin flakes into three separate bowls. Add your seasoning to the almond flour and mix.

  5. Dip each prepared ring in the egg first. Then coat in the flour then the egg again, and finally into the lupin flakes. Repeat with the remaining onion rings and place in freezer.

  6. Fill a large pot with oil and set over medium high heat. Fry the rings until golden brown, being careful not to fry them for too long as the cheese may ooze out completely.

  7. Drain on a paper towel, then serve with yogurt dip or sugarfree ketchup. Enjoy!
