Recipe (makes 2 servings at 5.4g net carb each):


  • 50g coconut flour
  • 3tsp xantham gum
  • 7.5 tbsp hot water
  • 1/3 cup grated hard cheese or Parmesan
  • Sprinkle of Salt
  • Oil to fry in



  1. Mix all ingredients together
  2. Once formed into a dough-like ball, cover and rest for 15 minutes
  3. Flatten and slice into small strips (size of however you want your fries to be, Mine turned out best when made into a medium sized fry like in the picture)
  4. Fry until golden brown
  5. Sprinkle your fries with salt (important to season as otherwise bland)
