Greek chicken and salad

Chicken
Marinade:

juice from one lemon (or 1/4 cup from a bottle, like I did 😬)

1/2 cup olive oil

3 gloves garlic, minced

1 tbsp dried oregano

1 tsp salt

pepper to taste

Steps:

Put chicken (about 1-1.5 lbs, I used three breasts) in large ziploc

Add marinade ingredients, seal bag, and smoosh around to mix it up

Refrigerate for 30 minutes, up to 2 hours. Don’t go much longer as the lemon can break down the chicken

Cook chicken! Remove from bag, season with a little paprika if you feel. I grilled ours on the BBQ, for probably 8 minutes or so a side. Could also bake (400 for about 20 mins) or pan fry.

Salad (amounts for two people)
spring mix or lettuce of choice (I used a whole container)

40g cucumber

1/2 bell pepper

1/2 small tomato

80g feta cheese

greek dressing of choice (I made my own… 3 tbsp olive oil, 4 tbsp red wine vinegar, a squirt of lemon juice, more oregano, salt, and pepper, shaken up in a jar… I used 4 tbsp dressing)

Chop veggies and add to lettuce. Add feta,add dressing and toss
