1/3 package frozen spinach

1/3c Mexican Cheese Blend (divided)

2 small pinches Sodium Citrate

Salt and pepper to taste

2 dashes Cholula (or hot sauce of choice)

Add spinach to a non-stick egg pan over low heat. Add a pinch of sodium citrate and stir to dissolve. Add 1/2 – 1/3 of the cheese and stir into spinach until fully melted. Season to taste with salt pepper. Add spinach to small plate for serving.
Clean pan and add oil over medium — medium-high heat. When pan and oil are hot add eggs. Season and cook to desired doneness. Plate eggs on top of spinach.
Clean pan and add ~2T water and a pinch of sodium citrate and remaining cheese over low heat and mix until smooth. (Optionally, add a couple dashes of hot sauce and crushed chilies). Season to taste. Pour cheese sauce over plated eggs and serve.
