INGREDIENTS:
- 2 heads cauliflower
- 2 tbsp unsalted butter
- 1 cup heavy cream
- 1/2 cup sharp cheddar
- 2 cups mexican blend shredded cheese
- 2 tsp salt
- 1/2 tsp black pepper
- 2 tsp garlic powder
- 2 tsp onion powder
- 1/2 cup mexican cheese blend for topping
INSTRUCTIONS

Wash and cut 2 heads of cauliflower. Place them in boiling water for 15 minutes then turn off the heat and leave them in the water for 20 minutes.

Place them in a large bowl and dump the excess water. Let it cool and use your hands to break them into smaller bite size pieces.

Preheat the oven to 350F.

In a small sauce-pan on medium heat, melt 2 tablespoons of unsalted butter. Add 1 cup of heavy cream and combine. Let it simmer and just before boiling add ½ cup of sharp cheddar cheese and 2 cups of shredded mexican blend. Mix until all is melted and well combined.

Add 2 teaspoons of salt, ½ tsp of black pepper, 2 tsp of garlic powder, and 2 tsp of onion powder. Mix it well.

Add the cauliflower to a baking dish and pour over the cheese sauce. Mix it well then add more Mexican cheese blend on top.

Bake for 35-40 minutes. Enjoy!
