Ingredients:
For the salad:
- 1 head, medium Cauliflower
- 2 each, Hard Boiled Eggs
- 3 spear, Kosher Pickle Spears
- 2 tbsp parsley, chopped
- 1/2 Cup, Chopped, Red Onion
- 1/2 tsp, paprika
For the Dressing:
- 3/4 cup, Primal Kitchen Avocado Mayo
- 1 tbsp, yellow mustard
- 1 tbsp, dijon mustard
- 1 tablespoon, Apple Cider Vinegar
- salt & pepper
Instructions:

Cut the cauliflower into bite-sized pieces. Steam for 5 minutes.

Drain and set aside to cool.

Chop the eggs, pickles, onion, and parsley. Combine with cooled cauliflower.

Add paprika and season with salt and pepper.

In a food processor, combine avocado mayo, (I use Primal Kitchen Mayo, it is the best quality) both mustards, apple cider vinegar, and salt in pepper. Blend until smooth.

Pour dressing over the salad and let the salad chill for 30 minutes before serving.
