Marinated Mushrooms

If you love mushrooms. you are going to love this recipe. This is a great mushroom appetizer recipe for any party or get together. This is keto friendly and gluten free.

200 g button mushrooms, sliced

3 Tablespoons Greek yoghurt

2 teaspoons tzatziki Sauce

2 small clove garlic, minced

Salt and black pepper to taste

White pepper 1 teaspoon

1/3 cup (50 g) peas, fresh or frozen

40 g walnuts, toasted and roughly chopped

1/2 tsp ground cumin

Green chilli, 1/4 chopped (To garnish)

Dried Basil (To Garnish)

In a small bowl place the oil, vinegar and juice of one lemon. Season with salt and pepper, then whisk to combine.

Place the mushrooms in a large bowl. Pour over the dressing and toss to combine. Leave to marinate for 1 hour.

Meanwhile mix together the yogurt, tzatziki , garlic, Juice of the half lemon and a pinch of salt. Whisk to combine.

Cook the peas in a pan of boiling water for 1 minute. Drain and set aside to cool.

Add the peas, walnuts and cumin to the mushrooms . Taste and adjust the seasoning

Serve in small bowls or plates top with tzatziki yogurt sauce and sprinkle with dried parsley.
